Apple Wallet does not offer a documented sort-by-date control for your passes. If you want the newest ticket at the top or old passes grouped by date, the built-in answer is manual organization, not an automatic date sort.
Two separate questions are easy to mix up: how Apple Wallet orders its pass stack, and how NeatPass searches or filters imported cards. Wallet can search cards, passes, and transactions, but a date field does not change the order of its pass stack.
Apple documents manual pass reordering
Apple's Wallet guidance documents moving passes by dragging them into the order you want. It also explains that some limited-use passes, such as event tickets or boarding passes, are hidden automatically after expiry: open More > Expired to view one, then choose Unhide if you want it back in the main view. It does not document a control that automatically sorts active passes by issue date, event date, or the date you added them.

An event date can help you decide which passes no longer need to stay in the active stack, but it does not create a chronological view. Keep a pass available with More > Expired and Unhide, or remove it when you no longer need it.
Relevance is not order
A Wallet pass may include a relevant date or location. Those fields may help iOS decide when it can surface a pass on the Lock Screen, but they do not define the Wallet stack order or guarantee a notification.
